Every service at Kumo begins before the first guest arrives. The counter is wiped down, rice is rested, and knives are honed with the same unhurried attention we bring to the menu itself.
A daily rhythm
We treat knife care as part of mise en place — not a chore reserved for slow days. A lightly used blade gets a quick strop; a heavier service means a full wipe-down, dry, and inspection for any micro-chips before the next seating.
Why it matters for nigiri
Clean cuts preserve the texture of fish. A dull edge bruises delicate flesh and changes how soy clings to each piece. Guests may not name the difference, but they feel it in the quiet snap between rice and fish.
