The art of shari

Rice is half of every piece of nigiri. Here is how we season, cool, and hold shari through a busy service.

Shari is never an afterthought at Kumo. We cook in small batches so each service gets rice at the right temperature and moisture level.

Seasoning balance

Our demo ratio favors a gentle vinegar lift without masking the fish. Adjust to your palate — some counters prefer a sharper finish, others a softer hold.

Holding temperature

Body heat matters. We keep the rice tub slightly warm at the start of service and refresh between seatings. Old rice compacts; fresh rice keeps its gloss.

Practice at home

Use short-grain rice, rinse until the water runs clear, and fold vinegar in with a slicing motion rather than mashing. Let it steam covered for ten minutes off heat before shaping.
